SOUTH INDIAN FILTER

Equipment:
- Medium roast coffee beans (ground fine)
- South Indian filter
- Filter coffee maker or a large mug
Ingredients:
- Coffee beans (3tablespoons)
- Water
- Milk (optional)
- Sugar (optional)
Directions:
- Boil water in a separate vessel or kettle.
- Add about tablespoons of Indian coffee powder (finely ground) to the filter. The filter should be filled about halfway.
- Tap the filter lightly to level the coffee powder.
- Place the filter on the top of the filter coffee maker or a large mug.
- Pour a small amount of boiling water into the filter, just enough to moisten the coffee powder.
- Allow the coffee powder to bloom for about 30 seconds.
- Pour hot water over the coffee powder in a circular motion, filling the filter about three- quarters full.
- Close the lid or cover the mug with a lid to keep the coffee hot.
- Allow the coffee to drip through the filter and into the coffee maker or mug.
- Once the coffee has fully dripped through, add milk and sugar to taste.
- Mix well and enjoy your hot cup of South Indian filter coffee.
